At Bandit Baking Co., we’re not your run-of-the-mill bakers. We’re flavor outlaws — a posse of rebels who saw one too many bland, cardboard-tastin’ gluten-free treats and decided it was high time for a good old-fashioned bake-off. We didn’t just cut out gluten — we banished it to the badlands.

Who is the Bandit?

Our Story

Bandit Baking Co. is run by a fella who’s spent 30 years ridin’ the ovens in the commercial baking world. He grew up in the food business the way some folks grow up on a ranch — learnin’ early that you show up before sun-up, work ’til the job’s finished, and earn every bit of respect with your own two hands.

He’s cut from hard-workin’, industrious stock, the kind of breed that doesn’t flinch at long days, hot kitchens, or a little sweat on the brow. After decades of big-batch production and keepin' whole operations fed, he decided to saddle up and build somethin’ smaller, truer, and closer to the heart.

Now he’s turnin’ out gluten-free, small-batch biscotti the cowboy way — slow, steady, honest, and without a single shortcut in sight.

That’s who’s behind Bandit.
